What you need
- Bench stone or handheld stone
- Mineral oil
Using a bench stone:
Step 1: Position your steak knife on the sharpening stone at approximately 20 degrees, with the blade’s edge facing away from you. Using the stone like a file, repeatedly push and pull the knife in an outward motion for about 8 to 10 times.
Step 2: Turn over the knife so that the blade faces you, and continue the push-and-pull motion for another 8 to 10 times.
Step 3: Add a little mineral oil on the stone and continue sharpening the knife by repeating steps 1 and 2.
Step 4: Tilt the knife so that the tip touches the stone, and continue sharpening.
Using a handheld stone:
Step 1: With the knife’s edge facing upward, position the stone at the bottom of the blade (the one nearest the handle) and angle it at approximately 20 degrees.
Step 2: Using the stone like a file, quickly move the stone in an up-and-down motion until you reach the tip of the knife.
Step 3: Add a little mineral oil on the stone and continue sharpening by repeating steps 1 and 2.
Step 4: Turn the blade over so that the edge faces downward. Continue sharpening.
